Class description: Originating in Valencia, Spain, paella is one of the most flavorful rice dishes in the world! Gather around as Autumn Nelson teaches you how to make a rich tasting chicken, sausage, and vegetable paella seasoned with saffron, rosemary and other spices and herbs. Using a 21-inch paella pan and special tripod gas burner she achieves the coveted socarrat (the crispy caramelized rice crust at the bottom) that provides the dish with its distinctive texture and flavor. Paella is perfect for parties and special occasions!
Born in Vietnam, Autumn Nelson entered the U.S. as a refugee in the late 1970's. Autumn began making Vietnamese dishes with her mother as a young girl. As she grew older, her passion for Vietnamese cuisine also grew and helped her to keep rooted in her heritage and cultural identity. In 2017, she self-published a book, "Our Story," which memorializes her family's history in Vietnam, harrowing escape during and after the fall of Saigon, and settlement in the U.S. A section of the book is also dedicated to her family's traditional recipes passed down through generations and how they were transformed by life in the U.S. Autumn now lives in Estes Park, where she enjoys creating new recipes and cooking on her patio with deer and elk as her audience.
